Healthy Mushroom and Capsicum Omelette

Time: 15 minutes.
Serves: 1.


Ingredients

1 tsp. olive oil 
¼ capsicum
¼ cup mushrooms
2 eggs
¼ cup shredded cheddar cheese

Method

Coat the bottom of the steamer with the oil. 

Add chopped capsicum and mushrooms to the steamer and cook in the microwave for 30 seconds. 

Beat two eggs and pour eggs on top of vegetables in the steamer. Cook for an additional minute. 

Slide omelette onto a plate. Top with cheese and fold in half.
