How long do eggs last?

It's recommended to purchase ecoeggs from a store with as much "Best Before" remaining on the product as possible. Then place the eggs in your fridge as soon as possible until ready for use. 

There is usually a bit of a safety margin with best before dates. Food Standards Australia says you can usually still eat foods for a while after the best before date as they should be safe but they may have lost some quality. The usual best before period for an egg is 6 weeks from packing. If you have eggs that are for instance one week past the best before date, you can crack one and smell it and check that it looks OK, and if baking with them check each egg individually before adding to the mix. They will probably be OK but proceed with caution.

By comparison you should never consume foods past a use-by date.
